Good to know — safety
The blades are genuinely sharp. That is the point, and it is also the risk. Always use the hand guard, never freehand the last few centimetres of anything, and store the blades in their holder rather than loose in a drawer. Keep the set well away from children. Most mandoline injuries happen on the final slice, when people stop using the guard because the food has got small.
